Tuna, prawn veloueté, sepia aioli, goma wakame salad, egg, Daikon radish, Trinidad 7 Pot chilli pepper

Main Course I.

Duck breast, pak choi, marinated beetroot, Hokkaido pumpkin, fennel, ginger sauce, Trinidad Scorpion Moruga chilli pepper

Monkfish, chorizo sauce, quinoa ragout, violette potatoes, Carolina Reaper chilli pepper
